UserAgent behaviour is not overwritten when cypress run is used

I have set in my test file the following userAgent:

Mozilla/5.0 (Windows NT 10.0; WOW64) AppleWebKit/537.36 (KHTML, like Gecko) Chrome/91.0.4472.164 Safari/537.36

When I run on my local cypress run the userAgent that appears if I print navigator.userAgent

Mozilla/5.0 (X11; Linux x86_64) AppleWebKit/537.36 (KHTML, like Gecko) HeadlessChrome/89.0.4389.72 Safari/537.36

☝️ Notice that is not Windows and is headless (I know that v8 run headless) but I would expect this to be overwritten by the test file.
