2 パターンが考えられる

カーソル前の平仮名を漢字に変える(Visual 選択でも可能だと柔軟性が高い) M-x skk-backward-and-set-henkan-point 相当
前回の漢字変換をキャンセルしてやりなおす(確定アンドゥ)
